Spaghetti Western Swing

First off, I forgot to take pictures during prep.  I remembered after we actually ate, so sorry about the non-appetizing title image.

I learned a long time ago from Sandra Lee Bo at Bo's-Bowl that it is not a sin to use some pre-made store bought ingredients to help make dinner.  Such as last night.

I am 90% sure I have never had baked spaghetti. Possibly in Baker Commons for dinner, but my high school didn't have a cafeteria, so I know it would have had to wait until college before taking that on.

Last night I struggled with a dinner idea. But I had pasta on hand (I always do), I had Parmesan cheese, I had chicken and I had a jar of Alfredo sauce.

Yes, I didn't make my own sauce.  Sue me!  

It came together easily.  Boiled 8 ounces of spaghetti while I cooked the one pound of chicken and preheated the oven to 350.  I drained the pasta and put it in a 9"ceramic dish, dumped in the chicken, covered with the full 16 ounces of Alfredo, some pepper and a little red hot pepper flakes and then mixed it all together.

After that, it topped with about a quarter cup of  grated Parmesan cheese and added a little chopped parsley.  Bake for 25-30 minutes.

It came out quite well.  The red pepper flakes packed some heat, so if you don't like that, just skip it.

Best yet, while things baked, I got all the clean-up done and made a salad before 710 every walked in the door.

...and there are leftovers - though this probably only serves about four.  Or maybe six if you're not a houseful of full-grown hungry men.
