I've done variations before, but to paraphrase Donald Rumsfeld - sometimes you post with the content you have; not the content you want.
Ingredients: I had 1.23lbs of ground chicken in the fridge and asked Gooooooogle what I could do with it.
It came back with a lot of options that sounded good, but I didn't have some of the ingredients at home - and since was in the teens (temp, not Epstein girls age) I was not venturing out again.
I'd say I made 'meatloaf', but honestly, isn't it 'chickenloaf'? Which the word does not make it sound appetizing.
Ehhhhh.......enough ketchup and Worcestershire, and save for the colouring, you'd never know the difference. Except maybe it is not as dense. Which is not a bad thing.
Making this is as easy as can be. Dicing the onion took the most time, only slightly more than peeling the onion. Well cooking took the most time, but in terms of prep it was the onion.
1 lb ground chicken
½ cup breadcrumbs
1 egg
¼ cup milk (I forgot to put it in the pic atop)
½ onion, finely diced
2 tbsp ketchup
1 tbsp Worcestershire sauce
For the Glaze:
¼ cup ketchup
1 tbsp brown sugar
1 tsp mustard
Instructions:
Preheat Oven: Preheat oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with parchment paper.
In a large bowl, mix ground chicken, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, salt, and pepper.
Shape the Loaf:
Transfer mixture to the baking sheet and shape into a loaf.
Make the Glaze: Mix ketchup, brown sugar, and mustard.
Brush half of the glaze over the meatloaf.
Bake for 30 minutes. Remove, brush with remaining glaze, and bake for another 10 minutes.
Rest and Serve: Let rest for 5 minutes before slicing.
Meatloaf obvi is darker in colour, so it looks different, but tastes great. Like I said, it was lighter than meatloaf in density too.
I paired it with the traditional sides - green beans and homemade mashed taters (with chives!).
710 loved it. I loved it. Shep loved the bite he had. It was great for a cold almost winter's night. And we have leftovers!
